Onion Orzo Pilaf

  1. In a medium saucepan, heat the oil over moderate heat.
  2. Saute the onions, scallions and garlic for 7 minutes or until the onions are soft.
  3. Cook, stirring occasionally until the onions are golden.
  4. Stir in the orzo.
  5. Add the broth, 1 cup water and salt and pepper.
  6. Bring to a boil, reduce to a simmer, cover and cook for 20 minutes or until the orzo is tender.
  7. Stir in the Parmesan.
