Lemon Ginger Snack Cake

  1. Heat oven to 375F.
  2. Combine flour, sugar, brown sugar, baking powder, ginger and lemon zest in ungreased 8-inch square baking pan.
  3. Set aside.
  4. Whisk sour cream, milk and egg together in bowl.
  5. Make two indentations in flour mixture; pour egg mixture in one and 1/4 cup butter in other.
  6. Stir until well mixed.
  7. Bake 25-30 minutes or until toothpick inserted in center comes out clean.
  8. Cool completely.
  9. Combine powdered sugar, 1 tablespoon butter and enough lemon juice for desired glazing consistency in bowl.
  10. Spread glaze over cooled cake.
