Holiday Lobster Spread Recipe
- 2 env. Knox unflavored gelatin
- 1/2 c. water
- 2 tbsp. lemon juice
- 1 pt. (16 ounce.) lowfat sour cream
- 1 bottle (12 ounce.) chili sauce
- 2 tbsp. horseradish
- 1 1/2 c. finely minced cooked lobster or possibly shrimp (about 8 ounce.)
- Assorted crackers or possibly party-size bread
- In medium saucepan, sprinkle unflavored gelatin over water and lemon juice.
- Let stand 1 minute.
- Stir over low heat till gelatin is completely dissolved, about 5 min.
- With wire whip or possibly rotary beater, blend in lowfat sour cream, chili sauce and horseradish; mix in lobster.
- Turn into Mirro Copper-tone 3 1/2 c. lobster mold; refrigeratetill hard.
- Serve with crackers.
- Makes about 3 1/2 c. of spread.
