Coconut-Fluff Peaches, or Pears

• 1 each egg whites
• 1/4 teaspoon lemon zest grated
• 1 1/2 teaspoon lemon juice
• 1 tablespoons coconut syrup
• 4 each cling peach halves
• 1 dash salt
• 2 tablespoons sugar granulated

1. Combine first 5 ingredients; place over boiling water; with egg beater, beat 4 or 5 min.
2. or until mixture stands in peaks.
3. Remove from heat; fold in rind and coconut.
4. Cool; heap in peach halves.
