Chavela's Carolina to California pork ribs (Costillas de Puerco)
- 1 Full Rack of Pork Ribs
- 2 tbsp salt
- 2 tbsp ground black pepper
- 3 tbsp dried onion flakes
- 1 tbsp paprika
- 1 tsp crushed red pepper
- 1 tsp garlic powder
- 3 tbsp olive oil
- 3 small whole dried chiles. Such as Chiles Japonesas or Chile de Arbol
- 1/4 cup White Vinegar
- 3/4 cup Yellow Mustard
- 3/4 cup honey
- 1/2 cup light Brown sugar
- 1 tsp Mexican Hot Sauce such as Valentina or Tapatio
- Remove the stems from the dried chiles.
- Place the chiles in the white Vinegar
- Mix together the dry seasonings for the rub.
- Rub the rack of ribs with the Olive oil
- Rub the spice mix onto the ribs.
- Preheat oven to 400F
- In a blender mix together the mustard, honey, brown sugar, mexican hot sauce, and vinegar with the chiles in it.
- Blend until all the sauce ingredients are formed into a smooth sauce.
- In a small sauce pot, bring the sauce to a simmer for about 10 minutes.
- Stirring constantly with a wooden spoon to keep the sugar in the sauce from burning.
- Place the ribs into the preheated oven and cook for 1 hour.
- After the ribs have cooked for an hour, brush with your sauce.
- Cook ribs for another hour, brushing with sauce every 15 minutes.
- Ribs can also be cooked on the grill.
- Either method is TASTY!
- After removing ribs from heat, let them rest for about 10 minutes to allow the juices to recess back into the meat.
