Orange or Lemon Jelly

  1. Grate orange or lemon rind.
  2. Add juice and let stand 10 minutes.
  3. Press juice through a thin cloth.
  4. Add sugar.
  5. Mix thoroughly.
  6. Heat rapidly to boiling.
  7. Add fruit pectin at once.
  8. Stir constantly before and while boiling.
  9. Heat to a full rolling boil.
  10. Boil hard 1/2 minutes.
  11. Remove from heat.
  12. Bottle it in sterilized jars, or keep it refrigerated.
