Baked Potatoes With Baked Beans Recipe

  1. Here's a dish which makes potatoes the main attraction.
  2. It's adapted from 500 Fat-Free Recipes by S. Schlesinger.
  3. It is also quite filling depending on the size of the potatoes.

  5. Preheat oven to 375F
  6. 2.
  7. Spread 1 Tbs.
  8. cottage cheese over each potato half
  9. 3.
  10. Add in 1/4 c. baked beans to each potato half
  11. 4.
  12. Top the baked beans on each potato half with 1 Tbs.
  13. grated cheese and 1 Tbs.
  14. scallions.
  15. 5.
  16. Bake till cheese melts, about 5 - 10 min.
  17. I usually serve this with what I call my Kitchen Sink Salad - everything in it but the kitchen sink - lots of veggies (greens, corn and peas from the freezer, radishes, jicama, etc.)
  18. or possibly else I serve it with stir-fry veggies.
