Pumpkin And Cream Cheese Roll-Up

  1. Preheat oven to 375u0b0.
  2. Grease a 15 x 10 x 1-inch jelly roll pan.
  3. Mix flour, baking powder, cinnamon, pumpkin pie spice, nutmeg, and salt.
  4. Beat eggs and sugar in a large bowl until fluffy.
  5. Beat in pumpkin.
  6. Stir in dry ingredients.
  7. Pour into pan.
  8. Spread evenly.
  9. Sprinkle with nuts.
  10. Bake 15 minutes. Loosen cake with a knife around edges.
  11. Invert onto clean damp towel dusted with powdered sugar.
  12. Trim 1/4-inch from all sides. Roll up cake and towel together from short side.
  13. Place seam side down on rack.
  14. Cool.
