Green Onion & 3 Cheese Pancakes
- 2 cups flour
- 3/4 cup hot water (140 degrees F)
- 1/2 tsp. salt
- 1/4 cup oil, divided
- 1-1/3 cups (325 mL) Cracker Barrel Finely Shredded 3 Cheese Mexicana Cheese
- 6 green onions, minced
- Mix flour, hot water and salt until mixture forms soft dough; shape into ball.
- Brush with 1/4 tsp.
- oil; cover with plastic wrap.
- Let stand 15 min.
- Roll out dough to 12x10-inch rectangle on lightly floured surface; brush with 3/4 tsp.
- oil.
- Top with cheese and onions to within 1/2 inch of edges.
- Roll up tightly into log, starting at one short end.
- Cut into 10 slices.
- Pinch both cut ends of each dough slice with fingers to seal.
- If necessary, push filling into centre of dough.
- (Filling should be completely enclosed in dough.)
- On same floured surface, flatten each piece slightly with palm of hand, then roll out to 7-inch pancake.
- Heat 1 tsp.
- of the remaining oil in flat-bottomed wok or medium skillet on medium-low heat.
- Add 1 pancake; cook 1 min.
- on each side or until golden brown on both sides.
- Repeat with remaining pancakes, adding remaining oil as needed.
