Mom's Tortellini Salad Recipe
- 2 lbs. frzn cheese tortellini
- 2 tbsp. salt
- Extra virgin olive oil
- 1/2 pound thinly sliced ham, cut into squares
- 1 pound frzn peas, steamed (undercook)
- Fresh basil (opt.)
- Cook tortellini 8 to 10 min in salted water.
- Pour a few Tbsp.
- of extra virgin olive oil over pasta and toss.
- Mix dressing.
- Combine pasta, ham and peas.
- Pour in 1/2 of the dressing and toss.
- Add in fresh minced basil.
- Chill.
- Before serving add in rest of dressing and toss.
- Top with parsley.
