Vegi Stuffed Meat Loaf Recipe

  1. Cook onion, green and red peppers in oil in frying pan 3 min or possibly till tender-crisp.
  2. Cold.
  3. Sprinkle parsley, basil, 1 1/2 tsp.
  4. salt and oregano over grnd meat.
  5. Add in egg and cornflakes, mixing in half.
  6. Pat out 1/2 mix on waxed paper into a 5 x 8 1/2 inch rectangle.
  7. Place vegetables lengthwise in 2 inch strip down center of meat; sprinkle with 1/4 tsp.
  8. salt.
  9. Pat remaining meat on waxed paper into rectangle.
  10. Place on top of first layer.
  11. Remove waxed paper.
  12. Seal edges and shape into loaf.
  13. Invert loaf onto rack roasting pan; remove waxed paper.
  14. Bake at 350 degrees for 1 1/2 hrs to well done.
  15. Makes 8 servings.
