Chicken in Green Curry
- 500 g shredded chicken meat
- 200 g chopped zucchini or 200 g aubergines
- 300 ml coconut milk
- 1 teaspoon chopped lemon rind
- 2 tablespoons lemon juice
- 1 tablespoon soy sauce
- 2 tablespoons coriander paste
- 1 tablespoon olive oil
- black pepper
- salt
- green chili (optional)
- Mix chicken with salt and pepper and keep aside.
- After about 15mins, take olive oil and add chicken to it, stir fry on high heat.
- When it changes colour and the water starts to dry, add zucchini and stir fry some more.
- Add half the quantity of coconut milk, lemon rind and let simmer for 15mins.
- Now add the remaining coconut milk, green chillies, lemon juice, coriander paste and cook for 5 more minutes.
- Finally add soy sauce and serve with steamed rice.
