Grandmother's Date Souffle Recipe
- 1/4 c. butter
- 4 lg. Large eggs, separated
- 1 c. lowfat milk
- 2 c. fresh pitted dates, minced
- 1/4 c. sugar
- 1/4 c. flour
- 1/2 teaspoon salt
- 1 teaspoon grated lemon rind
- All ingredients should be at room temperature.
- Preheat oven to 350 degrees.
- Cream butter and sugar together till light and fluffy.
- Gradually stir in lowfat milk.
- Beat egg whites together with salt till stiff but not dry.
- Fold into the lowfat milk mix.
- Mix in the dates and lemon rind.
- Pour into greased 1 1/2 qt souffle dish and bake 1 hour.
- Meanwhile, prepare sauce.
