Air Mail

• Ice
• 1 ounce white rum
• 1/2 ounce fresh lime juice
• 2 teaspoons honey mixed with 1 teaspoon warm water
• 1 ounce chilled Champagne

1. Fill a cocktail shaker with ice.
2. Add the rum, lime juice and honey syrup and shake well.
3. Strain into a chilled coupe and stir in the Champagne.
