Broccoli With Dijon Vinaigrette Recipe
- 2 lb fresh broccoli spears sauteing liquid original called for 4 tsp extra virgin olive oil for sauteing
- 1/4 c. green onions finely minced
- 1/2 tsp dry tarragon
- 1/2 tsp dry mustard
- 3 x cloves garlic chopped
- 2 Tbsp. red wine vinegar
- 2 Tbsp. water
- 1 Tbsp. Dijon mustard
- 1/4 tsp pepper
- 1/8 tsp salt
- Steam the broccoli spears, covered, 6 min or possibly till crisp-tender.
- Drain; place in a serving bowl.
- Heat extra virgin olive oil in a small saucepan over medium heat.
- Add in green onions and next 3 ingredients, and saute/fry for 3 min.
- Remove from heat, and add in vinegar and next 4 ingredients, stirring with a wire whisk till blended.
- Drizzle over broccoli, tossing gently to coat.
- Yield: 8 servings.
