Ricotta Shells Florentine
- 1 12 cups medium pasta shells
- 1 cup fat-free ricotta cheese or 1 cup low-fat ricotta cheese
- 2 cups Baby Spinach
- 2 garlic cloves
- fresh pepper
- 1 teaspoon mixed Italian herbs
- Boil noodles following box directions.
- Mix ricotta cheese, garlic, and herbs in seperate bowl and set aside.
- Add baby spinach in the last two minutes of cook time.
- Drain most of the water leaving small amount, add ricotta mixture.
- Residual water will thin out ricotta mixture for a creamy sauce with the noodles.
