Berries and Cream Crepes

  1. In a bowl combine berries, sugar and a squirt of lemon.
  2. Toss to combine.
  3. Spread 2 tablespoons sour cream over crepe.
  4. Top with 1/4 of the berry mixture.
  5. Fold into quarters and serve with berry coulis.
  6. Repeat with remaining ingredients.
  7. In a blender, combine all ingredients.
  8. Process until smooth.
  9. Pour through a fine-meshed sieve to remove the seeds and refrigerate until ready to serve.
  10. Yield: approximately 2 cups
