Doctor's Cake

• 1 cup sugar
• 2 ounces butter
• 1 egg
• 1 cup raisins
• 1 12 cups self raising flour
• 1 cup milk
• 2 teaspoons mixed spice

1. Bring to the boil all the ingredients except the flour, mixed spice and egg.
2. Allow to cool.
3. add remaining ingredients and mix well.
4. Transfer mixture to a one pound loaf tin and bake for 1 hour at 160c.
