Easy Mushroom Soup Recipe

  1. In 3-qt saucepan over medium heat, in warm oil, cook mushrooms and onion with garlic and oregano till tender and liquid is evaporated, stirring occasionally.
  2. Add in tomatoes, broth, and lemon peel; heat to boiling.
  3. Reduce heat to low.
  4. Cover; simmer 5-10 min to blend flavors.
  5. Garnish with Parmesan cheese.
  6. Makes 6 c..
