Microwave Lemon Meringue Pie Recipe

  1. Microwave water on high, in pyrex measuring c., for 1 1/2 min.
  2. Meanwhile, combine sugar, cornstarch and salt in a glass bowl; pour warm water over dry ingredients, stirring well.
  3. Microwave uncovered for 4 min on high, turning and stirring every minute till mix is thickened and bubbly.
  4. Gradually add in a small amount of warm mix into beaten egg yolks, add in yolk mix to warm mix, stirring constantly.
  5. Microwave uncovered on high for 1 minute.
  6. Stir well, then add in butter, lemon rind and juice.
  7. Let cold.
  8. Pour into baked pie shell.
  9. Cover with meringue, sealing edges.
  10. Bake in conventional oven, if you like, or possibly microwave uncovered on high 3 min.
  11. Let cold, then chill.
