Fresno Fruit Fantasia
- 1 cup sour cream
- 1 medium ripe banana
- 1 teaspoon lime juice
- 2 teaspoons honey
- 1 teaspoon maple-flavored or pure maple syrup
- 1/4 teaspoon ground ginger
- 1 ripe cantaloupe
- 2 tablespoons toasted unsweetened coconut, if desired
- Place sour cream, banana, lime juice, honey, maple syrup and ginger in 5-cup blender container.
- Cover; blend at low speed 1-2 minutes or until smooth.
- Split cantaloupe in half; scoop out each half with melon baller.
- Place balls in 6 individual dessert dishes.
- Add sour cream mixture; garnish with coconut.
