Chicken Gruyere Casserole with Spinach and Mushrooms
- 5 Large Eggs
- 3/4 cups Milk
- 1/2 teaspoons Salt
- 1/4 teaspoons Pepper
- 2 Boneless, Skinless Chicken Breasts
- 1/2 Onion, Finely Diced
- 1- 1/2 cup Mushrooms, Sliced
- 1- 1/2 cup Spinach, Lightly Packed
- 1 cup Gruyere Cheese, Grated
- Butter, For Greasing Dish

- Preheat oven to 350 F. 2.
- Grease a 3-quart casserole dish with butter and set aside.
- 3.
- Add eggs, milk, salt and pepper into a medium-sized bowl and whisk to combine.
- 4.
- Cut chicken into cubes.
- Add chicken, onion, mushrooms and spinach into the egg mixture and stir to combine.
- 5.
- Pour egg mixture into prepared casserole dish and top with Gruyere cheese.
- 6.
- Bake until top is bubbly and golden brown, 40-45 minutes.
- 7.
- Remove from heat and allow to cool 5-10 minutes before serving.
- I wanted something that would be easy to make during the week when Im low on energy and time and the drive-through seems like the only answer.
- A no muss, no fuss recipe that didnt require a lot of work and didnt make a ton of dishes.
