Lori's Cheese Puffs
- 1 cup evaporated milk
- 12 cup butter
- 1 teaspoon salt
- 1 12 cups potato starch
- 12 cup wheat starch
- 1 12 cups parmesan cheese (grated)
- 2 eggs
- parmesan cheese (grated, as needed)
- pecans (chopped, toasted, as needed)
- Heat oven 400.
- Bring the milk, butter and salt to a boil.
- Remove from heat.
- Whisk in the starches.
- Whisk in the eggs and parmesan.
- Knead until smooth.
- Shape itno 2 inch balls.
- Roll in the parmesan and pecans to coat.
- Place on a sprayed baking sheet.
- Bake 20 minutes.
