Better Pickled Eggs...

  1. Bring the vinegar, water, sugar, pickling spice, seeds, onion, bay leaf, peppercorns and dill to a boil.
  2. Reduce.
  3. Cover.
  4. Simmer 30 minutes.
  5. Let cool.
  6. Add the beets and eggs.
  7. Cover.
  8. Chill at least 72 hours.
