Chilled Soy Milk Kimchi Udon
- 70 grams Udon noodles (dried)
- 100 ml Soy milk
- 1 tbsp Mentsuyu (3x concentrate)
- 1 as much (to taste) Kimchi
- 1 dash Green onions (if available)
- 1 as much (to taste) Ra-yu
- Boil the udon.
- Pre-mix the soy milk and mentsuyu.
- Cut the kimchi into bite sizes.
- Finely chop the green onions.
- Drain and rinse the udon noodles under cold water.
- Pour the soy milk mentsuyu mix over the noodles and top them with kimchi and green onions.
- Drizzle ra-yu over it to finish.
