Minestrone Soup
- 14 1/2 oz diced tomatoes (canned)
- 15 oz garbanzo beans (canned)
- 4 cup vegetable broth (low sodium)
- 1 carrot (chopped)
- 3 celery stalks (chopped)
- 1/2 onion (chopped)
- 4 garlic cloves (crushed)
- 1 Basil (shredded)
- 1 salt and pepper
- 3 cup baby kale
- Combine all ingredients except the kale, salt, and pepper in a large soup pot and bring to a boil.
- Reduce heat and simmer, covered, for 45 minutes.
- Add kale and cook for ten more minutes.
- Season with salt, pepper, and basil.
