Tortilla Rolls(Servings: 6)

  1. Slice all vegetables lengthwise in thin strips.
  2. Marinate in Herb Oil (save teaspoon for mayonnaise) for at least two hours. Season with salt and pepper to taste and grill lightly.
  3. Warm tortillas; spread with jalapeno mayonnaise.
  4. Spread grilled vegetables on tortillas evenly.
  5. Roll tortillas tightly; trim ends and cut into 3 equal parts.
  6. Garnish with chopped cilantro.
