Tortilla Rolls(Servings: 6)
- 2 medium zucchini, sliced lengthwise
- 2 medium yellow squash, sliced lengthwise
- 2 medium carrots, sliced lengthwise
- 2 large tomatoes, sliced lengthwise
- 1 medium red onion, sliced lengthwise
- 1 part Herb Oil (see Herb Oil recipe)
- salt and pepper to taste
- 6 flour tortillas (10-inch)
- 1 bunch cilantro, chopped
- Roasted Jalapeno Mayonnaise (see recipe)
- Slice all vegetables lengthwise in thin strips.
- Marinate in Herb Oil (save teaspoon for mayonnaise) for at least two hours. Season with salt and pepper to taste and grill lightly.
- Warm tortillas; spread with jalapeno mayonnaise.
- Spread grilled vegetables on tortillas evenly.
- Roll tortillas tightly; trim ends and cut into 3 equal parts.
- Garnish with chopped cilantro.
