Best Tomato Bisque Recipe
- 1/3 c. butter
- 1/2 med onion chopped fine
- 1/3 c. flour
- 1 quart whole lowfat milk
- 2 1/4 c. tomato juice
- 1/2 tsp salt
- 1 tsp sugar
- 1/2 tsp celery salt
- 1/8 tsp freshly-grnd white pepper
- 1/2 tsp Worcestershire sauce
- 1/2 tsp Tabasco sauce
- 1 can diced tomatoes - (16 ounce) liquid removed
- 1 can crushed tomatoes with puree - (28 ounce) Progresso preferred
- Heat butter and saute/fry onion till tender.
- Stir in flour and heat to a bubble, stirring constantly.
- Remove from heat and slowly whisk in lowfat milk.
- Whisk quickly, but pour lowfat milk slowly.
- Return to medium-high heat and bring just to a boil.
- Add in remaining ingredients and bring to a simmer.
- Simmer gently stirring frequently for about 25 min.
- Ladle into bowls and serve.
- This recipe yields 6 servings.
