Chipotle Mashed Sweet Potatoes
- 2-1/4 lb. sweet potatoes (about 5), peeled, cut into 1/2-inch cubes
- 1 cup KRAFT Shredded Cheddar Cheese
- 1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
- 1 small canned chipotle pepper in adobo sauce, seeded, chopped
- 2 Tbsp. brown sugar
- 1/2 cup chopped PLANTERS Pecans, toasted
- Cook potatoes in boiling water in large saucepan 20 min.
- or until tender; drain.
- Place potatoes in large bowl; mash until smooth.
- Add cheese, sour cream, peppers and sugar; mix well.
- Sprinkle with nuts.
