Christmas Eggnog Cherry Bread with Eggnog Glaze

  1. Beat together first 4 ingredients until blended.
  2. Combine and add the next 6 ingredients and stir until dry ingredients are just moistened.
  3. Do not overmix.
  4. Divide batter between 5 greased and lightly floured mini-loaf foil pans (6x3x2 inches) and bake in a 325 F. oven for 45 to 50 minutes or until a cake tester, inserted in center, comes out clean.
  5. Allow to cool for 15 minutes and then remove from pans and continue cooling on a rack.
  6. when cool, drizzle tops with Eggnog glaze and allow a little to drip down the sides.
  7. Yields 5 mini-loaves EGGNOG GLAZE: Stir together all the ingredients until blended.
