Buffalo Chicken Cheddar Cheese Balls
- 1 each Rotessirie Chicken
- 1/4 cup Frank's hot sauce or Buffalo chicken sauce
- 1 tsp fresh pepper
- 1/4 cup green onions (chopped)
- 1 1/2 cup shredded sharp cheddar
- 1 cup white flour
- 3 each eggs
- 1 cup seasoned bread crumbs
- Debone chicken and discard skin.
- Finely chop chicken checking for and removing small bones.
- Add in a large bowl chicken, buffalo sauce, pepper, cheese and green onions.
- Roll 1 in.
- Balls of mixture.
- Roll each ball in flour, then roll in eggs and then roll in breadcrumbs.
- Set chicken balls aside and refrigerate for 20 min.
- Deep fry at 350 in small groups (about 6-8 at a time) for about 2-2 1/2 min.
- Top with parmesan and parsley and serve warm.
- Use ranch or bleu cheese dipping sauce for an added bonus!
