Red Wine Pears with Creamy Vanilla Rice
- 1 cup red wine
- 1 cup water
- 1/3 cup caster sugar
- 2 Corella pears, peeld and halved Safeway 1 lb For $1.88 thru 02/09
- 2 cups cold, cooked jasmine or long grain rice
- 2 tablespoons caster sugar
- 2 teaspoons vanilla bean paste
- 250 ml PHILADELPHIA Cream For Desserts, double cream alternative
- COMBINE the wine, water and sugar in a small saucepan, stir over medium heat until the sugar dissolves.
- Add the pear halves and simmer gently for 20 minutes or until the pears are just tender.
- Remove the pears to a bowl, then allow the liquid to simmer until it becomes syrupy, allow to cool then pour over the pears.
- Chill.
- COMBINE the rice with the sugar, vanilla and PHILLY.
- Chill.
- SPOON the rice into 4 serving glasses, top with the pears and drizzle with syrup.
- Serve immediately.
- HANDY TIP: The rice is delicious served with any seasonal fresh fruit.
