Red Wine Pears with Creamy Vanilla Rice

  1. COMBINE the wine, water and sugar in a small saucepan, stir over medium heat until the sugar dissolves.
  2. Add the pear halves and simmer gently for 20 minutes or until the pears are just tender.
  3. Remove the pears to a bowl, then allow the liquid to simmer until it becomes syrupy, allow to cool then pour over the pears.
  4. Chill.
  5. COMBINE the rice with the sugar, vanilla and PHILLY.
  6. Chill.
  7. SPOON the rice into 4 serving glasses, top with the pears and drizzle with syrup.
  8. Serve immediately.
  9. HANDY TIP: The rice is delicious served with any seasonal fresh fruit.
