Griddled prawns with guacamole recipe

  1. Place the prawns in a shallow dish, add the olive oil and lemon juice and toss together.
  2. Season with a little salt and ground black pepper.
  3. Heat a griddle pan or barbecue and when hot add the prawns.
  4. Cook for 8-10 mins, turning once until the prawns have turned bright pink.
  5. Heap the prawns onto a platter and serve with the guacamole, lemon and lime wedges and some crusty bread to serve.
