Griddled prawns with guacamole recipe
- 12 large shell-on raw prawns
- 1 tsp olive oil
- 0.5 lemon, juice only
- 200 g (7.1oz) pot of fresh guacamole dip
- 4 lemon wedges
- 4 lime wedges
- 4 slices crusty bread
- Place the prawns in a shallow dish, add the olive oil and lemon juice and toss together.
- Season with a little salt and ground black pepper.
- Heat a griddle pan or barbecue and when hot add the prawns.
- Cook for 8-10 mins, turning once until the prawns have turned bright pink.
- Heap the prawns onto a platter and serve with the guacamole, lemon and lime wedges and some crusty bread to serve.
