Braised Chicken With Tomatoes And Tarragon Recipe

  1. Sprinkle chicken pcs with 3/4 tsp.
  2. salt and 1/2 tsp.
  3. pepper.
  4. Heat oil in a large skillet.
  5. Add in chicken; cook over medium-high heat, turning occasionally till seared on all sides, about 12 min.
  6. Remove chicken; cover and keep it hot.
  7. Remove and throw away all but 2 Tbsp.
  8. of the pan drippings.
  9. Add in shallots; saute/fry till softened, about 1 minute.
  10. Add in wine, bring to boil, and simmer till wine reduces to 1/4 c., about 1 minute.
  11. Add in vinegar, tomatoes, and tarragon; return chicken to skillet.
  12. Cover and simmer till chicken is cooked through, about 8 min.
  13. Serve immediately.
