Spinach With Chicken and Rice (Dutch)
- 450 g frozen spinach
- 1 cup yellow rice or 1 cup brown rice, uncooked
- 24 ounces chicken breasts
- 1 shallot
- 2 garlic cloves
- 4 ounces chestnut mushrooms or 4 ounces button mushrooms
- 4 ounces coarse salami or 4 ounces chorizo sausage
- 5 tablespoons olive oil
- salt & pepper, to taste
- 4 tomatoes
- Thaw and drain the spinach.
- Cook the rice according to package directions.
- Peel and chop the shallot and the garlic.
- Rinse and slice the mushrooms and tomatoes.
- Dice the chicken breasts and season them with salt and pepper.
- Chop the salami or chorizo.
- Heat 2 Tbsp of oil in a skillet and saute the shallot and garlic.
- Turn down the heat, add the spinach and cook for 8 minutes on low.
- Heat the remaining 3 Tbsp of the olive oil in another big skillet or wok and saute the chicken about 5 minutes.
- Add the salami or chorizo and mushrooms and fry for another 3 minutes.
- Add the cooked rice and spinach and mix well.
- Salt and pepper to taste.
- Top with slices of tomato and serve.
