American Pie
- 500 grams flour
- 100 grams powdered sugar
- 250 grams squared butter
- 1 lemon zest
- 2 large eggs, beaten
- 1 milk
- 8 large apples, cut up small
- 1 tbsp squared ginger
- 50 grams butter
- 100 grams brown sugar
- 1 tsp cinnamon
- 2 egg yolks
- 150 grams raisins
- 50 grams blackberries (not frozen !)
- Prepare the dough.
- Therefor stir together flour, sugar, lemon peel and butter.
- Mix, then add eggs and milk and kneat it all until crumbly.
- Put it into the fridge for at least half an hour
- Now slowly heat up butter and sugar in a large pot.
- Meanwhile square the apples and ginger, add them and cook everything slowly for 30 minutes
- Now take the dough out the fridge and cut off 2/3.
- Flatten it.
- Oil the baking dish and form a cake base out of the flattened dough.
- Make sure that it reaches over the frame of the dish.
- Now put in the stuffing.
- Make sure, that the middle is filled a little bit higher.
- Preheat the oven on 180 degrees C
- With a fork, perforate the upper frame of the dough and use some of the egg yolks to brush it along there, so it works like a glue.
- Roll out the rest of the dough and cover the apples with it.
- Make sure both parts of the dough stick together.
- Now with a knife cut 5 thin stripes into the dough, so the juice can flow out.
- With the left over egg yolks, cover the dough.
- Let it bake for 55-60 minutes until golden coloured and crispy.
- To serve, add some vanilla ice cream - delicious :)
