Apricot Pineapple Loaf Recipe
- 1/3 c. Oil
- 3/4 c. honey
- 1 c. low-fat vanilla yogurt
- 1 tsp vanilla
- 2 x Large eggs
- 1 c. whole wheat flour
- 1 1/2 c. all-purpose flour
- 1/4 c. cornmeal
- 1 1/2 tsp grnd cardamom
- 1/4 tsp salt
- 1 tsp baking pwdr
- 1/2 tsp baking soda
- 1/2 c. minced dry pineapple
- 1/2 c. minced dry apricots
- 1/4 c. grnd walnuts
- In a large mixing bowl, combine oil, honey, yogurt, vanilla and Large eggs.
- In a separate bowl, stir together the remaining ingredients.
- Add in oil mix to the dry ingredients.
- Stir till the dry ingredients are moistened.
- Pour batter into two 8 inch loaf pans.
- Bake at 350 degrees for 45 to 60 min, or possibly till cake tester comes out clean.
- Remove loaves from pans to cold.
- Cold thoroughly before slicing.
