Seafood pasta in Vodka Sauce
- 1 Olive oil
- 3 clove Garlic, minced
- 2 medium Shallots, chopped
- 1 1/2 cup Vodka
- 2 cup Chicken stock
- 2 cup Tomatoes, chopped
- 1 tsp Sugar
- 1 packages Cooked mixed seafood, thawed and rinsed
- 1 Salt, to taste
- 1 Pepper, to taste
- 1/2 cup Heavy cream
- 1/2 cup Fresh basil, chopped
- On medium heat, heat oil.
- Saute garlic and shallots.
- Add vodka, let reduce to half.
- Add tomatoes, sugar and chicken stock.
- Bring to boil, add seafood then simmer.
- Add cream, simmer for 1 minute, remove from heat.
- Add basil and salt and pepper to taste.
