Nutty Breakfast Parfait

  1. Mix oats and walnuts in 13x9x2" baking pan.
  2. Combine 1/4 cup of the maple syrup and butter in small heavy saucepan.
  3. Bring to boil.
  4. Pour maple syrup mixture over oat mixture; stir to blend well.
  5. Bake 10 minutes in a 350 oven, stirring occasionally.
  6. Bake until mixture is golden and crisp, stirring occasionally, about 8 minutes longer.
  7. Cool granola completely in pan.
  8. (Can be prepared one week ahead.
  9. Store in airtight container at room temperature).
  10. Gently toss strawberries, peaches, blueberries, kiwifruit and remaining 3 tablespoons maple syrup in large bowl to blend.
  11. Divide half of the kiwifruit mixture among 6 parfait or wine glasses.
  12. Sprinkle each parfait with half the granola mixture, dividing equally.
  13. Top each with half the yogurt.
  14. Repeat layers.
  15. Serve immediately.
