Fudge Crust Mini Cheesecake (light)
- 2 Fudge vanilla wafers
- 1 tbsp Stevia in the raw
- 1 Smart balance butter (light)
- 3/4 packages Cream cheese (fat free)
- 1/4 cup Stevia in the raw
- 1 tsp Vanilla extract
- 1/4 cup Egg beaters
- PREHEAT oven to 300F Mix wafer crumbs, 3/4 tbs stevia and butter.
- Press mixture onto 4-1/2" springform pan BAKE 7 min
- BEAT cream cheese, 1/4 cup stevia and vanilla with electric mixer till well blended.
- Slowly add egg on low Pour batter into pan
- OPTIONAL: Add some stir-in ideas, pour over crusts
- Place pans on baking sheet BAKE 40 to 45 min or until centers are almost set.
- Cool before removing rims Refrigerate for at least 4 hrs
