Bistro Naturals Jambalaya
- 12 ounces bistro naturals polska kielbasa loop smoked sausage
- 8 ounces shrimp
- 1 ounce extra virgin olive oil
- 1 12 tablespoons garlic
- 1 medium onion (large dice)
- 2 green peppers (large dice)
- 2 -28 ounces diced tomatoes (I used diced tomatoes with green chiles)
- 1 (49 ounce) can chicken broth
- 1 teaspoon cayenne
- 2 bay leaves
- 1 (14 ounce) box long grain white rice
- Saute onions, garlic, peppers and celery in oil, add sausage and continue to saute.
- Add tomatoes, chicken broth, bay leaves and cayenne and simmer on low for 30 minutes.
- Add rice and cook till tender.
- Finally add shrimp and simmer until shrimp is cooked, approximately 4-5 minutes.
- NOTE: I used bacon chopped instead of the olive oil to saute vegetables.
