Beef Tripe Soup (Soto Babat) Recipe
- 1 1/4 lb beef tripe cleaned, washed well
- 1/2 lb beef boiled in
- 5 c. water till tender and cut in 1/4" cubes (optional)
- 12 c. water
- 4 c. beef broth
- 1 x inch ginger root peeled, and sliced lengthwise
- 4 x garlic cloves peeled and sliced
- 1 Tbsp. distilled white vinegar
- 6 ounce giant white radish peeled, and diced in 1/2" cubes
- 5 sprg celery leaf minced
- 1 Tbsp. fried shallots
- Rinse tripe well under running water till very clean.
- Bring water to a boil in a stockpot, add in tripe and simmer till soft (approximately 2 hrs).
- Strain water and cold tripe in ice water.
- Cut in pcs approximately 1 inch by 1/2 inch.
- Bring beef stock, ginger, garlic and vinegar to a boil in a large stockpot.
- Add in tripe, radish, and beef cubes (optional).
- Simmer till vegetables are soft.
- Garnish with celery leaf and fried shallots.
- This recipe yields 4 to 5 servings.
