Beef Tripe Soup (Soto Babat) Recipe

  1. Rinse tripe well under running water till very clean.
  2. Bring water to a boil in a stockpot, add in tripe and simmer till soft (approximately 2 hrs).
  3. Strain water and cold tripe in ice water.
  4. Cut in pcs approximately 1 inch by 1/2 inch.
  5. Bring beef stock, ginger, garlic and vinegar to a boil in a large stockpot.
  6. Add in tripe, radish, and beef cubes (optional).
  7. Simmer till vegetables are soft.
  8. Garnish with celery leaf and fried shallots.
  9. This recipe yields 4 to 5 servings.
