Cucumbers With Sesame-Miso Dressing

  1. Place sliced cucumbers in a bowl, add the salt, and toss with fingers until slices are coated.
  2. Let rest 10 minutes, then rinse well and gently squeeze out moisture.
  3. Slices should be slightly limp but still crisp.
  4. Blend the remaining ingredients, increasing the sugar if you prefer a sweeter dressing.
  5. Add cucumber slices and toss to coat with dressing.
  6. Serve at room temperature or chilled.
  7. Does not keep, should be eaten immediately.
