Basil Pasta with Handmade Basil Sauce
- 300 grams Spaghetti
- 150 grams Bacon
- 1/2 Onion
- 1 Red chili pepper
- 70 grams Basil leaves
- 40 grams Grated cheese
- 2 tsp Consomme soup stock granules
- 1/3 tsp Grated garlic
- 140 grams Olive oil
- Add all of the ingredients for the basil sauce to a food processor and mix until everything is evenly blended to make the basil sauce.
- Add some salt (not listed) to boiling water and boil the pasta for 1 minute less than directed on the package.
- Reserve about 100 ml of the pasta water.
- Cut the onion into 3 mm thick slices.
- This time I used block bacon cut into sticks, but sliced bacon is also OK!
- Take a little of the olive oil from the top of the basil sauce, add to a frying pan, and turn on the heat.
- Cook the bacon.
- Add chili pepper if you like.
- Once the bacon is covered with oil, add the onions and lightly cook on high heat.
- Add the basil sauce and mix everything together.
- Add the boiled pasta and the reserved 100 ml of pasta water and cook.
- It's done when everything is evenly mixed with the basil sauce.
- I don't season it any more than this, but you can add salt and pepper to taste.
- Transfer to a serving plate, and if you have any fresh basil leaves, garnish to make it more pretty.
