Mini Lime Pies

  1. Place one oven rack in middle & one on bottom, & then preheat oven to 425* spray mini muffin pan.
  2. Unroll dough & (using small round cookie cutter, or top of glass) cut 16 small rounds.
  3. Push one round down in each muffin cup, making little mini pie crust cups.
  4. Parbake about 10 minutes until golden brown & remove from oven
  5. Switch oven over to broil.
  6. Spoon one tablespoon of lime filling into each crust.
  7. Sprinkle a little salt on each one, & then top with enough marshmallow to cover lime filling.
  8. Place back in on lower rack.
  9. Watch for the marshmallow to toast to your liking (5-10 minutes) & remove promptly from oven & serve.
  10. Refrigerate leftovers
  11. You can use pretty much any kind of pie filling, or pudding in these little crusts, make sure they are cooled before filling with pudding & top with any kind of fresh fruit, zest, candies and/or whipped cream... pretty much whatever you'd like
