Mini Lime Pies
- 1 packages of ready made (& if frozen, thawed) pie dough
- 1 jar lime curd/pie filling
- 1 jar marshmallow creme
- 1 salt, to taste
- 1 nonstick spray
- Place one oven rack in middle & one on bottom, & then preheat oven to 425* spray mini muffin pan.
- Unroll dough & (using small round cookie cutter, or top of glass) cut 16 small rounds.
- Push one round down in each muffin cup, making little mini pie crust cups.
- Parbake about 10 minutes until golden brown & remove from oven
- Switch oven over to broil.
- Spoon one tablespoon of lime filling into each crust.
- Sprinkle a little salt on each one, & then top with enough marshmallow to cover lime filling.
- Place back in on lower rack.
- Watch for the marshmallow to toast to your liking (5-10 minutes) & remove promptly from oven & serve.
- Refrigerate leftovers
- You can use pretty much any kind of pie filling, or pudding in these little crusts, make sure they are cooled before filling with pudding & top with any kind of fresh fruit, zest, candies and/or whipped cream... pretty much whatever you'd like
