Easy Chocolate Banana Muffins with Pancake Mix (no extra butter or sugar)
- 2 Ripe bananas
- 100 ml Vegetable oil
- 1 Egg
- 200 grams Pancake mix
- 1 Chocolate bar
- 1 tbsp *Almond slices (optional)
- Add one banana into a bowl, and mash using a masher or the back of a spoon.
- Add the vegetable oil and egg, and mix well with a whisk.
- Add pancake mix, and mix some more.
- Preheat the oven to 180C.
- Chop the remaining banana into pieces with a knife.
- Add the Step 4 banana to Step 3.
- Break the chocolate bar into small pieces, and add to the bowl.
- Fold in with a spatula.
- Fill the cups with the Step 5 batter to about 80% full, and place on a baking sheet.
- *Sprinkle on almond slices on top if you like.
- Bake in the oven preheated to 180C for about 20 minutes.
- Check to see if they're fully baked through with a bamboo skewer.
- If they go through without any uncooked batter sticking to them, they're done!
- *If you remove the muffin from the cup...it looks like this.
- You can wrap them as is for a present, and it will be cute.
