Easy Chocolate Banana Muffins with Pancake Mix (no extra butter or sugar)

  1. Add one banana into a bowl, and mash using a masher or the back of a spoon.
  2. Add the vegetable oil and egg, and mix well with a whisk.
  3. Add pancake mix, and mix some more.
  4. Preheat the oven to 180C.
  5. Chop the remaining banana into pieces with a knife.
  6. Add the Step 4 banana to Step 3.
  7. Break the chocolate bar into small pieces, and add to the bowl.
  8. Fold in with a spatula.
  9. Fill the cups with the Step 5 batter to about 80% full, and place on a baking sheet.
  10. *Sprinkle on almond slices on top if you like.
  11. Bake in the oven preheated to 180C for about 20 minutes.
  12. Check to see if they're fully baked through with a bamboo skewer.
  13. If they go through without any uncooked batter sticking to them, they're done!
  14. *If you remove the muffin from the cup...it looks like this.
  15. You can wrap them as is for a present, and it will be cute.
