Blackberry Coconut Cookies Recipe
- 3 1/4 c. Flour
- 1 tsp Soda
- 1 tsp Salt
- 1/2 c. Shortening
- 1/2 c. Butter
- 1 c. Brown sugar
- 2 x Large eggs
- 1/2 c. Water
- 2 c. Flaked cocoanut
- 1 tsp Almond extract Blackberry jam
- Measure flour.
- Add in soda and salt; blend in well.
- Cream shortening, sugars and Large eggs thoroughly.
- add in water and almond extract and mix well.
- Blend in flour mix.
- Stir in cocoanut.
- Drop mix by level tsp.
- 2 inches apart on ungreased baking sheets.
- Make small dent in top of each cookie with a thimble.
- Place 1/2 teaspoon Blackberry jam on each cookie.
- Bake at 400 for 10-12 min.
