Mexican Bruschetta Recipe
- 5 ears roasted corn
- 2 roma tomatos blanched, peeled, deseed, fine diced
- 1 roasted poblano pepper deseeded
- 1 roasted jalapeno deseeded
- 1 roasted habanero deseeded
- 1 lime juiced
- 1/4-1/2 cup sour cream
- 1 small onion fine diced
- 3 Tblspn olive oil
- 2 cloves garlic minced
- 30 small baguette slices
- salt tt
- pepper tt
- cilantro for taste and garnish
- 1.
- Place sliced baguettes in over at 350 untill firm.
- 2.place peppers in food processor of blender with oil and puree.
- 3.
- Strain puree mixture.
- 4.
- Mix tomatos, onion, garlic, corn, salt, pepper, lime, and sour cream.
- 5.
- Add pepper puree one tspn at a time and check for your spicy level.
- 6.
- Scoop mixture ontop of baguettes then add cilantro for tast and garnish
