Todd's Rhubarb Crisp
- 2 lbs rhubarb, cut to 3/4-inch thickness
- 1 cup sugar
- 34 cup flour, divided
- 12 cup butter, cold, cut into pea-size pieces
- 12 cup brown sugar, packed
- 1 cup rolled oats
- 12 teaspoon ground cinnamon
- Preheat oven to 400 degrees Fahrenheit.
- Combine rhubarb, white sugar, and 1/4 cup of the flour in a greased 9 x 13 pan.
- In a separate bowl, combine 1/2 cup flour, butter, brown sugar, rolled oats, and cinnamon; gently mix to combine.
- Sprinkle on top of the rhubarb.
- Bake for 35 to 45 minutes or until rhubarb is tender.
- Serve hot.
