Broccoli Beer Cheese Soup

  1. Combine all ingredients except 1/4 cup reserved fat free half & half, cornstarch and broccoli in 4-quart saucepan.
  2. Cook over medium heat, stirring occasionally, 14-18 minutes or until cheese is completely melted.
  3. Stir together reserved 1/4 cup fat free half & half and cornstarch in bowl; stir into hot soup.
  4. Continue cooking, stirring occasionally, 3-4 minutes or until soup just comes to a boil.
  5. Stir in broccoli.
  6. Continue cooking 2-3 minutes or until heated through.
  7. Variation:
  8. Beer Cheese Soup: Omit broccoli.
  9. Prepare soup as directed.
